Feel free to get creative with your Chicken Nuggets and Waffles. Add a dollop of whipped cream or a sprinkling of powdered sugar for an extra touch of sweetness. For a spicy kick, GorillaBowlZ's Spicy Mayo is the perfect companion.
Ingredients

2 cups all-purpose flour (10-oz)

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 tablespoon coconut sugar (or any sugar)

2 large eggs (or 3 small or medium eggs)

½ cup buttermilk (or 5 tablespoon greek yogurt and 3 tablespoon whole milk) (or ¼ cup sour cream and ¼ cup whole milk)

2 tablespoon maple syrup
-
4 tablespoon unsalted butter, melted

1 cup ice-cold club soda (or sparkling water or sprite)

6 strips cooked crisp bacon, crumbled

2 tablespoon unsalted butter

2 tablespoon hot sauce, preferably Frank’s Red Hot (or more)

½ cup honey

Chicken nuggets, preferably GorillaBowlZ

For Serving
Directions
In a large bowl, mix flour, baking powder, baking soda, salt, and sugar. Set aside.
Separate the eggs yolks from the whites. Whisk the egg whites until stiff peaks form. In a separate large bowl, whisk the eggs yolks, buttermilk, and maple syrup. Slowly drizzle the melted butter while whisking. Fold in the egg whites with a rubber spatula until just combined. Fold in the soda water. Pour mixture over the dry mix and fold until just combined. Do not over mix (there should still be plenty of lumps).
Preheat waffle iron according to manufacturer’s instructions, then brush with a little melted butter. Ladle ⅓ cup of batter and close the waffle iron until waffle is golden brown and crisp on both sides, 3 to 5 minutes depending on your waffle iron. Keep warm on a rack on a baking sheet in a 200F (93C) oven while preparing the hot honey.
Serve warm with GorillaBowlZ chicken nuggets and hot honey sauce.
Hot Honey
In a small saucepan, mix together the butter, hot sauce, and honey over medium-high heat. When it is about to boil, turn the heat off and cover the pan to keep warm.
